Fish Sauce is type of delicious sauce in every meal of Vietnamese so making fish sauce is traditional job from many generations of many villages cross from Northern to Southern VietNam. One of famous brand name is Phan Thiet, Bình Thuận Province known by high protein, flavor and attractive color and because of Phan Thiet fish sauce is made by fresh anchovies. Anchovies are collected by each morning harvest from the sea with main season from Feb to Aug with the same size and same type, remove the fish are not fresh to get highest protein. In order to get the best quality with special recipe, making fish sauce need to separate many stages such as choose fish, feed enough salt, put to the jars ( each of family own one color of jars), open the jars as suite day and restage as distillation. Each stage require high technical of fish man here to get best of Phan Thiet fish sauce.
